Cookies N’ Cream Ice Cream Cake

We pair one of our most-loved cookie with popular ice cream flavours for an artful dessert that both the kids and adults can’t resist. Best of’s easy to do and you’ll look like the star.

  • 4 to 5 Bon Appé Fudge Brownie Cookies with NUTELLA®, finely chopped
  • 3 cups (¾ L) French vanilla ice cream
  • 2 cups (½ L) chocolate ice cream
  • 2 to 3 tbsp toffee bits
  • Whipped cream (optional)

  1. Cover the bottom a 5 x 9-inch loaf pan evenly with cookie pieces.
  2. Scoop out vanilla ice cream evenly over cookie layer. Using the back of a spoon or a spatula, spread out the ice cream and press down gently to fill the layer evenly.
  3. TIP: You may want to have a bowl of hot water nearby to help smooth out the layer.
  4. Scatter another layer of chopped cookies evenly over vanilla ice cream.
  5. Scoop out chocolate ice cream and place evenly over cookie pieces. Use the back of a spoon or spatula to press down and fill layer evenly.
  6. Smooth out the top layer with the spatula or wet hands. Freeze overnight.
  7. When serving, gently nestle out the ice cream cake from loaf pan (you may need to run it under warm water for a few seconds). Slice and serve topped with toffee bits and whipped cream, if using.

I made this for my daughters 20th b'day instead of buying those expensive cookie cakes, it was a HUGE hit.
