Olive oil for brushing
2/3 cup (150 mL) ricotta cheese
4 slices prosciutto, cut in half
4 fresh figs, cut in half
1 bunch fresh baby arugula
Appetizer picks (optional)
Preheat oven to 350 °F. Cut the focaccia roll into quarters, so you’ll have 8 even square pieces. 2. Brush squares with olive oil and bake for 8 to 10 minutes until crisp. Let cool.
Spread ricotta cheese evenly on squares. Top each with prosciutto, a few leaves of arugula and fig half. Secure with picks, if using.
