Stuffed Mediterranean Hamburger

We’ve upped the ante by giving the ho-hum burger an irresistible cheesey centre, Mediterranean toppings – from herbed sundried tomatoes to olives – and a soft ciabatta bun to hold it all together. One bite and you’ll be transported to sun-drenched lands.

Bon Appe Product:  Traditional Ciabatta Rolls

  • 1 slice toast bread, torn into small pieces
  • 2 tbsp (30 mL) milk
  • 1 tbsp (15 mL) Worcestershire sauce
  • 1 egg
  • 2 basil leaves, chopped
  • 1 tsp (5 mL) freshly ground black pepper
  • 1 cup (1 large log, 280 g/10 oz) goat cheese
  • 1 lb (454 g) ground veal
  • 4 Bon Appé Traditional Ciabatta Rolls
  • 2 cups (2 oz/75 g) baby arugula
  • 1 cup (250 mL) sundried tomatoes in oil, finely chopped
  • ¼ tsp (1 mL) dried oregano
  • Garnishes: extra goat cheese, banana peppers, sliced olives, roasted red peppers

  1. Place torn bread in a small bowl and sprinkle with milk and Worcestershire sauce. Mix in egg until combined. Mix in basil and season with pepper.
  2. Use your hands to mix in veal until evenly mixed. Shape veal mixture into eight patties by shaping them with your hands. Place 1 tbsp of goat cheese in the middle of 4 hamburger patties.
  3. Place a veal patty on top of each of the patties topped with goat cheese and pinch the edges to create a sealed, stuffed patty.
  4. Preheat grill to medium-high setting. Grill stuffed veal burgers until no longer pink in centre, about 5 minutes per side.
  5. Serve on ciabatta rolls and top with arugula, sundried tomatoes, pinch of oregano and more goat cheese, if desired, or other garnishes
