Layered Pear Crumble French Toast

A perfect addition to your brunch, with a combination of fruit crumble and a French toast bake. It starts with a layer of Nutella-filled croissant French toast, then topped with fruity pears and a sweet crumble.

  • 8 Bon Appé Large Nutella Filled Croissant, cut in halves lengthwise
  • 2 eggs, beaten
  • ¾ cup (175 mL) milk
  • ¼ tsp (1 mL) salt
  • 2 large ripe pears, cored, chopped
  • 1 tbsp (30 mL) lemon juice
  • 2 tbsp (30 mL) butter, softened
  • 1 tbsp (30 mL) + 4 tbsp (60 mL) brown sugar
  • 1 cup (250 mL) rolled oats
  • 2 tbsp (30 mL) melted butter
  • 1 tbsp (15 mL) all-purpose flour
  • Mixed berries for serving

  1. Preheat oven to 350 °F.
  2. Whisk eggs, milk and salt together in a bowl; pour into a shallow dish or pie plate. Soak croissant halves in egg mixture until saturated (about 2 hours or let sit overnight in the refrigerator).
  3. In a medium bowl, add chopped pears and toss with lemon juice and 1 tbsp of brown sugar. Set aside.
  4. Spread softened butter over the bottom of a 9 x 12-inch casserole dish. Sprinkle remaining 4 tbsp brown sugar over the butter. Arrange soaked croissant halves onto sugar in a single layer. Add a layer of pear mixture.
  5. To make crumble, combine rolled oats, melted butter and flour in a small bowl and toss well. Sprinkle mixture over entire layer of pears.
  6. Bake in preheated oven until beginning to firm and the crumble is golden brown, about 25 to 30 minutes. Serve with berries.
